Curried Red Lentil

SERVES: 4-6 | PREP TIME: 1 Hour


This is a very easy and quick dish to make. You can serve it over quinoa or brown rice and with a salad for a complete protein plant based meal.

  • 1 tablespoon olive or coconut oil
  • 2 cloves of garlic (1 teaspoon minced)
  • 1 onion (small/medium) chopped
  • 1 medium sized turnip peeled and cubed
  • 1/2 teaspoon sea salt
  • 1 cup red lentils
  • 1-2 tablespoons madras curry powder
  • 3 1/2 cups water or broth
  • 1 tablespoon tomato paste
  • 1 can full fat coconut milk
  • ½ lemon juiced


  1. Heat oil in medium sized sauce pan or pot.
  2. Saute garlic and onions until soft then add cubed turnip and stir.
  3. Add lentils and curry powder and salt to coat.
  4. Add water or broth and cook 30-40 minutes until lentils are soft.
  5. Add tomato paste and cook another 5-10 minutes.
  6. Stir in coconut milk and lemon juice. Add salt to taste.
