Blueberry & Carrot Salad

SERVES: 2 | PREP TIME: 20 min

INGREDIENTS

  • 2 carrots, ribboned or grated
  • 1 handful fresh For You® blueberries
  • 1/2 handful sunflower seeds
  • equal parts olive oil and lemon juice
  • salt and black pepper to taste

DIRECTIONS

  1. Grate or ribbon carrots into a bowl.
  2. Toss on blueberries and sunflower seeds.
  3. Whisk oil, lemon juice and pepper together.
  4. Pour over carrot mixture.
  5. Toss to coat.
