Roasted Parsnips

SERVES: 2 | PREP TIME: 50 min


  • 4 For You® Parsnips (peeled and cut into cubes)
  • 1 T. olive oil
  • 2 cloves garlic (minced)
  • 1 T. honey
  • 1/4 tsp. salt
  • pepper to taste
  • 1 T. chopped mint (optional)
  • 1 T. chopped sage (optional)


  1. Preheat oven to 450°F.
  2. Place the parsnips into a mixing bowl and toss with olive oil.
  3. Sprinkle in the garlic, honey, salt and pepper to taste.
  4. Toss until evenly coated, and spread evenly onto a backing sheet.
  5. Bake in preheated oven until the parsnips are tender (approximately 30 min), add a little time if you like them crunchy. (Scrape into a mixing bowl and toss with mint and sage)
