Place the parsnips into a mixing bowl and toss with olive oil.
Sprinkle in the garlic, honey, salt and pepper to taste.
Toss until evenly coated, and spread evenly onto a backing sheet.
Bake in preheated oven until the parsnips are tender (approximately 30 min), add a little time if you like them crunchy. (Scrape into a mixing bowl and toss with mint and sage)
