Root Vegetable Stew

INGREDIENTS

  • 1 For You® Onion, chopped
  • 3 For You® Carrots, chopped
  • 3 For You® Potatoes, chopped
  • 1 For You® Parsnip, chopped
  • 1 For You® Turnip, chopped
  • 1/4 C. uncooked white rice
  • 1 tsp. ground black pepper
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 2 1/2 C. water

DIRECTIONS

  1. In a large pot over medium-high heat, combine onion, carrots, potatoes, parsnip, turnip, rice, pepper, cumin, salt and water.
  2. Boil until vegetables are tender, about 30 minutes, adding more water if necessary.
