Root Vegetable Stew

INGREDIENTS

  • 1 For You® onion, chopped
  • 3 For You® carrots, chopped
  • 3 For You® potatoes, chopped
  • 1 For You® parsnip, chopped
  • 1 For You® turnip, chopped
  • 1/4 cup uncooked white rice
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 2 1/2 cups water

DIRECTIONS

  1. In a large pot over medium-high heat, combine onion, carrots, potatoes, parsnip, turnip, rice, pepper, cumin, salt and water.
  2. Boil until vegetables are tender, about 30 minutes, adding more water if necessary.
