Root Vegetable Stew

INGREDIENTS

1 For You® onion, chopped

3 For You® carrots, chopped

3 For You® potatoes, chopped

1 For You® parsnip, chopped

1 For You® turnip, chopped

¼ cup uncooked white rice

1 teaspoon ground black pepper

1 teaspoon ground cumin

1 teaspoon salt

2 ½ cups water

DIRECTIONS

In a large pot over medium-high heat, combine onion, carrots, potatoes, parsnip, turnip, rice, pepper, cumin, salt and water. Boil until vegetables are tender, about 30 minutes, adding more water if necessary.
