These stuffed pitas are a quick, vegetarian lunch built around ForYou® radishes, fresh greens, and creamy hummus. The radishes add the crunch and pepper that elevates the whole sandwich from boring to memorable. Pack them for lunch or assemble for an easy dinner — they come together in minutes.
- 1 tsp. grated lemon rind
- 1 (8 oz) container plain hummus
- 4 (6″) whole-wheat pitas, halved
- 4 green leaf lettuce leaves, halved
- 1 1/4 C. thinly sliced English cucumber
- 3/4 C. thinly sliced [radishes](https://www.miedemaproduce.com/radishes)
- 1/3 C. thinly sliced red onion
- 1/2 C. crumbled feta cheese
- Freshly ground black pepper
- Steamed Sugar Snap Peas (recipe below)
- salt and pepper to taste
- 3 C. fresh sugar snap peas
- 1 T. chopped fresh mint or tarragon
- 1 T. butter
- salt and pepper to taste
1. Combine rind and hummus. Divide hummus mixture evenly among 8 pita halves (about 1 1/2 tablespoons each).
2. Divide lettuce, cucumber, radishes, onion, and cheese evenly among pita halves. Sprinkle with pepper.
3. Steam peas 5 minutes or until crisp-tender; drain. Combine peas, mint, butter, salt, and pepper; toss well.
